For the Chicken Scampi:

1 lb chicken breast, sliced into strips
1/2 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
3 tablespoons unsalted butter
4 cloves garlic, minced
3/4 cup chicken broth
1 tablespoon lemon juice
1/4 cup grated Parmesan cheese
1/2 teaspoon red pepper flakes (optional)
Fresh parsley, chopped (for garnish)

1 cup long-grain white rice
2 cups chicken broth
2 tablespoons butter
2 cloves garlic, minced
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper

πŸ‘©‍🍳 Directions:

1️⃣ In a saucepan, melt butter over medium heat. Add garlic and sautΓ© for about 1 minute until fragrant. Stir in rice and toast for 1–2 minutes.

2️⃣ Pour in chicken broth, add salt and pepper, and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes until tender. Stir in Parmesan cheese, fluff, and set aside.

3️⃣ In a shallow bowl, mix flour, garlic powder, Italian seasoning, salt, and black pepper. Coat chicken strips evenly in the mixture.

4️⃣ Heat olive oil and 2 tablespoons butter in a large skillet over medium heat. Cook chicken for 3–4 minutes per side until golden and fully cooked. Remove and set aside.

5️⃣ In the same skillet, melt remaining butter and sautΓ© garlic for about 30 seconds.

6️⃣ Pour in chicken broth and lemon juice. Let simmer for 2–3 minutes to reduce slightly.

7️⃣ Stir in Parmesan cheese and red pepper flakes, mixing until the sauce slightly thickens.
